Les <strong>diff\u00e9rentes \u00e9tapes de la production<\/strong> ont \u00e9t\u00e9 expliqu\u00e9es\u00a0: apr\u00e8s une pasteurisation \u00e0 80\u00b0C pendant 30 minutes puis une fermentation pendant 4 heures \u00e0 43\u00b0C, le yaourt prend sa consistance. Pour stopper la fermentation, les yaourts sont ensuite envoy\u00e9s dans une chambre froide pendant 30 minutes. Ils sont enfin conditionn\u00e9s puis stock\u00e9s avant d\u2019\u00eatre exp\u00e9di\u00e9s chez les clients dont 90% sont bretons. Un nouveau march\u00e9 vient d\u2019ailleurs d\u2019\u00eatre conclu avec le CHU de Rennes. L\u2019entreprise rencontre aussi un succ\u00e8s grandissant aupr\u00e8s de grands h\u00f4tels parisiens ainsi qu\u2019aupr\u00e8s de certaines \u00e9piceries fines. Pour ces clients de prestige, les yaourts sont conditionn\u00e9s dans des pots en verre.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">L\u2019entreprise Ker Ronan, c\u2019est aussi <strong>une exploitation agricole<\/strong> d\u2019environ 90 vaches laiti\u00e8res que les \u00e9l\u00e8ves ont pu d\u00e9couvrir avant le retour au coll\u00e8ge.
